Braces Friendly Make Ahead Breakfast Recipe - Mini Frittatas

 Is it really September? It feels like Summer just started, but Seattle Schools had their first day  yesterday and Shoreline Schools started last week. At North Seattle Orthodontics we are trying to get back in the swing of the school year here in the office and at home.  Since September is Better Breakfast Month we thought it would be fun to share this delicious Braces Friendly Breakfast recipe.

  We know how the morning can be, you are trying to get yourself ready for work, get the kids out of bed, make sure homework and  lunches make it into their backpacks. Just when you think you have it all under control  someone is missing one soccer cleat....does this sound familiar? When are you supposed to find time to cook a healthy breakfast? If you are already tired of collecting Pop Tart wrappers from the back seat of the car, we found this yummy mini frittata recipe that can be made ahead. Just throw it in the microwave for 30 seconds while you are looking for that missing soccer cleat.

Ingredients (8 mini frittatas):
6 large eggs
1/3 cup heavy cream
3 slices of deli meat of your choice (turkey, ham or roasted beef), roughly chopped
a handful of baby spinach, briefly chopped
1/4 cup frozen corn
1/3 cup shredded cheese of your choice
salt and pepper to taste
Preheat oven to 350F. Grease muffin tin or line with muffin liners.
In a large bowl, mix together eggs and cream until well combined.
Add remaining ingredients and mix well.
Spoon batter into the prepared muffin tin, about 3/4 full. Transfer muffin tin to oven and bake for 18 to 20 minutes. Transfer muffin tin to a wire rack and let cool completely.
Use a pairing knife to run around the edges of the frittatas to release them from the muffin tin.
The frittatas can be frozen up to a month. Reheat in microwave before serving.
